We consider coffee a daily ritual, using methods and specialty coffee from Mayan regions. ITZAM was awarded in 2025 as one of The Best Coffee Shops of Guatemala. We are number #31 of North, Central America and Caribean of the TOP 100 List.

Chilaquiles with Hilachas
Slow-cooked shredded beef in red sauce, eggs your way, black corn chips.
Maya Tartine
Sourdough bread, eggs your way, chili oil, roasted corn, creamy avocado, toasted pumpkin seeds, smoked pork belly.
Mountain Breakfast
White beans in a tomato and pumpkin seed sauce, pork pieces, eggs your way, avocado.
Corn Croquette with Iguashte Sauce
White corn dough and piloy beans, served with a toasted pumpkin seed and chili iguashte sauce.
“Churrasquito”
Slow-cooked beef (16 hours), meat juice, roasted onions, creamy beans, fresh salad, and avocado.
Pork Shank Tamal
A deconstructed version of the iconic Guatemalan tamal: 24 oz pork shank, slow-cooked for 16 hours and glazed in chili and tomato reduction.
Corn Husk Ceviche
Black corn husks sauce, served with a grilled chipilín tamal, avocado, corn, citrus, cilantro, and your choice of octopus, shrimp, or mixed seafood.
Shrimp in Jocón Sauce
Jumbo shrimp, in a green jocón sauce of tomatillo and squash seeds. Served with rice and beans.
Roasted Plantain
Roasted plantain, mole sauce, sesame seeds, and candied cacao.
