ITZAM opened its doors on May 17, 2025, with a clear purpose: to bring together gastronomy, specialty coffee, and craft cocktails through a unique contemporary Maya concept.

We built it around one idea: that Maya food deserves a dining room as serious as any other. Every dish starts from an ancestral ingredient or a Guatemalan preparation, then asks what it becomes with contemporary technique.

For visitors, it is a way into Guatemala that is not a tour of ruins. The Maya are not a civilization that ended. They are still cooking.

For Guatemalans, it is the chance to meet ingredients you grew up with on a plate you have not seen them on before.
