We select coffees from regions deeply connected to the ancient Maya world, highlighting the distinctive character of each origin—from bright fruit and floral notes to chocolate, caramel, and warm spices.
At ITZAM, every cup is prepared with precision and respect for its origin, connecting Guatemala’s coffee heritage with the landscapes, communities, and culture that have shaped these highlands for centuries.

Brewing Methods
Filter coffee is brewed by slowly pouring hot water over freshly ground coffee. As the water passes through the grounds and filter, it extracts the coffee’s natural flavors and aromas before flowing into the cup below.
Unlike espresso, which uses pressure and a short extraction time, filter methods create a lighter, cleaner cup that allows subtle notes of fruit, florals, chocolate, and sweetness to become more noticeable.
Each brewing method—V60, Kalita, or Melitta—controls the flow of water differently, creating its own balance of clarity, body, and flavor.
Coffee Roasters
At ITZAM, we roast our coffee in small batches using an Aillio roaster, allowing us to carefully control every stage of the roasting process.
Small-batch roasting gives us greater precision and consistency, helping us highlight the natural sweetness, acidity, aroma, and distinctive character of each coffee. Rather than imposing a heavy roast profile, our goal is to let the origin and quality of the bean speak for itself.
Each batch is carefully monitored and refined to bring out the best expression of Guatemala’s specialty coffee.

In 2025, ITZAM was named one of The Best Coffee Shops of Guatemala. One year later, we ranked #31 in North, Central America & the Caribbean's 100 Best Coffee Shops 2026 — placing a Maya-inspired coffee house in Antigua Guatemala among the finest specialty coffee destinations in the region.
The recognition reflects what we believe coffee should be. We work with 100% Guatemalan beans grown in Maya regions, prepared through pour-over methods that treat each brew as a ceremony rather than a transaction.
Behind the bar, our baristas are trained not only in extraction, but in the story of where the bean comes from and the communities that grow it. Coffee was never separate from Maya life. Neither is it from ours.
