ITZAM's bar sits in the heart of Antigua Guatemala, and it works the same way our kitchen does: ancestral ingredients, contemporary technique, and a story in every glass that is actually worth telling.

We Infuse Our Own Spirits

Most bars build cocktails from what arrives in the bottle. We start earlier than that.

Our signature drinks are built on neutral bases — white rum, vodka, gin — that we infuse in-house using sous vide, sealing the spirit with the ingredient and holding it at controlled temperature for one to two hours. The low heat extracts aroma and flavor without cooking off the alcohol or turning the botanicals bitter, which is what happens in an open-air maceration left to sit for weeks.

The ingredients come from Guatemalan producers

  • Corn — the axis of Maya life, distilled into a soft, sweet liqueur

  • Cacao — the drink of kings and priests, here as a house liqueur

  • Guava — bright, floral, unmistakably tropical

  • Chamomile — used by the Maya as medicine and in ritual

  • Chili — for heat and depth rather than punishment

  • Tomato — savory, unexpected, the backbone of our most surprising drink
